Fermentation Studies on α-Galactosidase Production

Enzymes have been extensively used in several .industrial processes and these are extremely efficient and highly specific biocatalysts. The glycosidic bond is one of the most stable bonds in nature and catalyze the hydrolysis of this bond may be considered among the most powerful enzyme catalysts known. Glycoside hydrolases or Glucosidases are a wide spread group of enzymes that hydrolyze the glycosidic bonds between two carbohydrates. Enzymes, which catalyze the hydrolysis of glycosidic linkages, are widely distributed in nature and included α-galactosidase, β galactosidase, β-glucosidase, maltase etc. α-Galactosidases are of particular interest in view of much potential of their biotechnological and medicinal applications. They play a crucial role in improving the nutritional value of legume- based food. α-Galactosidases are produced by various microorganisms. In present study α-Galactosidases enzymes are fermented with Streptomyces griseoloalbus and also estimation of glucosidic activity. This work established the potential use with Global optimization technique for optimizing the fermentation medium for α-galactosidase production.
